Alton Brown French Onion Dip
French Onion Dip Adapted from Alton Brown Makes approximately 4 servings as an appetizer 1 large sweet onion, diced fine (white or yellow, red onions end up a rather odd color, and a few scallions may be added for contrast) 3 ounces butter Pinch sugar Salt and pepper to taste, plus a small splash of Worcestershire sauce 2 cups sour cream, regular or low fat, non-fat if nothing else is available In a large skillet over lvery ow heat, sweat the onion with the butter and the sugar- this takes about 1/2 hour, with a lid on, stirring occasionally, but results in a very silky texture. Avoid aluminium pans as this can cause a non-toxic but bright green reaction with the acids in the onion. Remove from the heat and add the salt, pepper and Worcestershire, allow to cool. Fold the mixture into the sour cream and chill until cold. Serve with crudites, chips, pita toasts, etc.
