Pumpkin Cheesecake
Crust- 1 pkg. (6oz) zwieback cookies, crushed 1/4 c. sugar 6 t. Melted Butter Mix & press into bottom of 10" springform pan
3 8oz Pkgs cream cheese, softened 3/4 c. white sugar 3/4 brown sugar 5 eggs 1 16oz can pumpkin 1 3/4 tsp. pumpkin pie spice 1/4 c. heavy cream
Start from the cream cheese and beat all together w/an electric mixer (eggs one at a time), mixing well after each ingredient. Pour batter into cheese cake pan with crust and bake at 325 in a water bath for 1hr 35 min. Sprinkle w/streusel topping (6tsp melted butter, 1c brown sugar, 1c chopped walnuts) bake an additional 10 minutes. Cool on a wire rack before removing spring form pan.
